As a skater of several years, learning to skate can takes just one day, becoming proficient/graceful can take a while after that but a week or two should be enough. The tricky part is finding roller-skates, most places sell roller-blades and hire skates are awful at best. You'd need a couple of people trained in first aid but it's pretty difficult to get badly injured on rollerskates (just make sure everyone knows how to brake!). Heck, this would be so much fun to do, even with the risks it's well worth having a crack at.
