Great timing .... I have just completed a four show+bump out+after show party weekend so I guess I'm qualified to give an answer here.
Unless your show is profitable enough to be able to employ people to do this then I think its a definate YES! We only had 9 shows over 3 weekends but it still took near on 3 hours for our cast and crew of 50ish to get 90% of the job done. We were then able to enjoy our feast, there is still a lot of other behind the scenes things to do - washing costumes etc.
I would imagine all casts and crews would be covered by the companies insurance at every show, as long as suitable supervision and skill matching occurs then it works well.
