I don't know anything about the professional theatre industry in SA, but there are plenty of amateur theatre companies around where you could gain some stage experience. Check out
http://theatreguide.tripod.com to find out all about the Theatre scene in Adelaide, including What's On, Auditions, and also contact details for a number of Theatre Companies.
