Seeking entertainment ideas/acts

I am involved in the organisation of a conference in Perth in early October. Attendees will be from all over Australia who work with young people (supervise and care for them) in boarding schools in remore areas. Students live great distances from high schools so have to board away from home.
The supervisors/carers are fantastic people and we are looking at entertaining them in Perth with music, song, dance, poetry, stories or .......?
We have two events planned - a President's reception by a hotel pool and a cruise on the Swan river. We are thinking of having a singalong of Australian songs while on the river so suggestions are welcome if your creative interests are awakened!
If you know of anyone who might fit the bill I would be pleased to hear from you.
