Try the various uni's (Swinburne, RMIT, NMIT, Deakin, VCA, etc.), they do short courses. Also ACOPA in Nth Melb (www.acopa.com.au), Red Stitch, NICA (circus skills classes), and any amateur group. Check out most of the venues in Melbourne, they should have at least some adverts available. Read the Age (metro section, especially on Saturdays), and occasionally classes are advertised in the Herald Sun. There's heaps of classes going on out there, so just keep your eyes open and you'll find something.
